Which SPI protocol are you referring to? There's a low-speed SPI
protocol used for talking to SEEPROMs, and a high-speed
multiple-SERDES protocol for chip interconnect. The low-speed version
is partially documented in the part documentation (try Atmel or
Xicor).

I had the same problem a while ago, and didn't succeed in finding any SPI "standard" either (for the low-speed version). I ended up using a Motorola 68HC08 datasheet: http://www.freescale.com/files/microcontrollers/doc/data_sheet/MC68HC08AB16A .pdf Regards Gunnar
