What exactly soft cores?
Usually, soft core consist of several HDL files and timing constraint file more heavy (in comparing with hard cores: couple of HDL files and several lines in SDC/UCF file).

First job is to choose the softprocessor. If you have skills on a particular hardprocessor, I think you can look for the same soft processor avoiding waste of time. If not, I cannot give criteria if I don't know if the project is educational or industrial.
Good luck
